Ingredients/Components
- milk - 1/4 c
- egg - 1 item
- stick butter - 1/2 item
- medium onion - 1 item
- salt and pepper - 1 item
- Cheddar cheese - 1/2 item
- medium-large eggplant - 1 item
- soda crackers - 1 pkg
- stick celery - 1 item
How to make eggplant pie:
Peel eggplant, cut into cubes. Dice onion and celery. Cook until tender, drain and mash. Add other ingredients to mixture and mix well. Pour mixture into a greased glass pie plate or shallow baking dish. Bake at 350° for 30 to 45 minutes.Note: Summer squash may be substituted for eggplant.
