  • sugar - 1 c
  • eggs - 2 item
  • vanilla - 1 tsp
  • salt - 1/2 tsp
  • nutmeg - 1/4 tsp
  • baking powder - 2 tsp
  • all-purpose flour
  • rum extract - 2 tsp
  • margarine or butter, melted - 1/2 c
  • dairy eggnog not canned - 1 c

How to make eggnog quick bread:

Heat oven to 350°. Grease bottom only of 9 x 5-inch loaf pan. Beat eggs in large bowl. Add sugar, eggnog, margarine, rum extract and vanilla; blend well. Add flour, baking powder, salt and nutmeg, stirring just until dry ingredients are moistened. Pour into greased pan. Bake at 350° for 45 to 50 minutes or until toothpick inserted in center comes out clean. Cool 10 minutes; remove from pan. Cool completely. Makes 1 (16 slice) loaf or can be baked in two 5 3/4 x 3 1/4-inch loaf pans, greased on bottoms only. Bake at 350° for 35 to 40 minutes.
