  • sugar - 1 c
  • milk - 1 c
  • sour cream - 1/4 c
  • flour - 2 Tbsp
  • stick margarine - 1 item
  • eggs, beaten - 4 item
  • self-rising flour - 1 c
  • lemon rind, grated - 2 tsp
  • unbaked 9-inch pie shell - 1 item
  • 1/2 stick butter, melted - 1/4 c
  • blackberries or other fruit - 1 qt
  • cottage cheese, mashed or whipped smooth
  • lemon juice 2 lemons, squeezed - 1/4 c

How to make easy blackberry cobbler:

Heat oven to 350°. Beat eggs in a large bowl with an electric mixer. Mix sugar and flour together and add to the eggs. Beat until blended. Add sour cream, cottage cheese, lemon juice, rind and melted butter. Mix thoroughly. Pour into the unbaked pie shell. Bake for about 45 minutes or until knife blade inserted into the center comes out clean. Filling will be softly firm.

Powdered sugar may be lightly sifted over the top of pie about 15 minutes before removing from the oven. Broiler unit may be turned on briefly when pie is done to lightly caramelize the surface. Garnish with lemon twists and mint leaves. Serves 6 to 8. Total preparation time: 1 hour and 15 minutes.
