Curried chicken salad
Ingredients/Components
- curry powder - 1 tsp
- mayonnaise or salad dressing - 3/4 c
- cooked chicken, cubed - 3 c
- can mandarin oranges, drained - 1 oz
- finely chopped celery - 1 c
- can sliced water chestnuts, drained - 1 oz
- seedless red grapes
- lemon juice concentrate - 2 tsp
- soy sauce LaChoy - 2 tsp
- Boston lettuce or leaf lettuce - 1 item
How to make curried chicken salad:
In a large bowl, combine chicken, water chestnuts, grapes, mandarin oranges and celery. In another bowl, stir together the mayonnaise, curry powder, soy sauce and lemon juice. Mix well. Stir this into chicken mixture and toss to coat. Cover and chill for 8 hours. Makes 6 to 8 servings.To serve, place a lettuce leaf on each plate and top with chicken salad.
If salad needs to be stored longer than 8 hours, stir mandarin oranges in just before serving.
