Ingredients/Components

  • sugar - 1 c
  • eggs - 2 item
  • sour cream - 1/2 pt
  • salt - 1/2 tsp
  • baking powder - 1 tsp
  • baking soda - 1 tsp
  • all-purpose flour - 2 c
  • margarine - 1/4 lb
  • warm water - 1 Tbsp
  • can whole cranberry sauce - 1 oz
  • crushed nuts - 1/2 c
  • almond or vanilla flavoring - 1 tsp
  • Add unbeaten eggs 1 at a time

How to make cranberry swirl coffee cake:

Cream margarine and sugar gradually. Add unbeaten eggs 1 at a time. Use mixer at medium speed. Reduce mixer speed and add dry ingredients which have been sifted together. Alternate with sour cream, ending with dry ingredients. Add flavoring. Grease 8-inch tube pan. Put a layer of batter in bottom of pan, then swirl around some of the cranberry sauce. Add remaining batter and swirl the remaining cranberry sauce on top. Sprinkle with crushed nuts. Bake in 350° oven for 55 minutes. Remove from pan after 5 minutes cooling.Topping:3/4 c. confectioners sugar1/2 tsp. almond or vanilla flavoring1 Tbsp. warm water Mix ingredients and spread over top of coffee cake after it is taken out of pan and let topping run over sides of cake.
