Cranberry swirl cake
Ingredients/Components
- stick margarine - 1 item
- sugar - 1 c
- eggs - 2 item
- flour - 2 c
- each: baking powder and soda - 1 tsp
- salt - 1/2 tsp
- sour cream - 1 c
- almond extract - 1 tsp
- can whole cranberries - 1 oz
- chopped nuts - 1/2 c
- confectioners sugar - 1 item
- Add eggs, one at a time, beating in well
- warm water - 2 Tbsp
How to make cranberry swirl cake:
Cream margarine and sugar. Add eggs, one at a time, beating in well. Add dry ingredients, sour cream and flavoring, mixing quickly and thoroughly.Grease and flour an 8-inch tube pan. Put in a layer of batter, then swirl a layer of cranberry sauce. Top with rest of batter and use remaining cranberry sauce on top. Sprinkle with nuts. Bake in a 350° oven for 1 hour. Cool 5 minutes, then remove from pan.Topping:3/4 c. confectioners sugar2 Tbsp. warm water1/2 tsp. almond extract Mix; spread over top of cake, letting it run down the sides.
Note: You can use just powdered sugar sprinkled on top instead of topping.
