Cranberry nut bread
Ingredients/Components
- sugar - 1 c
- salt - 1/2 tsp
- chopped nuts - 1/2 c
- flour - 2 c
- oil - 2 Tbsp
- soda - 1/2 tsp
- baking powder
- hot water - 2 Tbsp
- beaten egg - 1 item
- orange juice - 1/2 c
- cranberries, cut in half - 1 c
- grated orange rind - 1 Tbsp
How to make cranberry nut bread:
Grease a 9 x 5 x 3-inch loaf pan. Preheat oven to 325°. Sift flour, baking powder, soda and salt. Add sugar.In a large mixing bowl, beat egg. Add oil, rind, orange juice and water. Beat well. Add dry ingredients, blending well as you add. Fold in nuts and cranberry halves. Spoon into prepared pan. Bake in slow 325° oven for 1 hour or until center springs back when lightly touched. Cool on rack for 10 minutes. Remove from pan and cool completely. Wrap in plastic wrap and place in fridge. Slices best following day.
