  • vanilla - 1 Tbsp
  • granulated sugar - 2 c
  • baking powder - 2 tsp
  • egg whites - 6 item
  • fine nuts - 2 c
  • 1/2 saltine cracker crumbs - 1 item

How to make cracker cake:

Mix the first 3 ingredients together. Beat egg whites and vanilla until small peaks. Gradually add sugar to egg whites while beating until stiff peaks, but not dry. Carefully fold dry mixture into egg whites. Line cake pans with aluminum foil, shiny side up. Grease foil and divide the batter evenly into pans. Bake at 325° for 40 to 45 minutes. Let cool slightly. Lift foil from pan and peel foil away from layers.

Beat 3 half pints of whipping cream, sweeten to taste and ice layers. Be sure and put a small amount of the whipping cream on the plate before placing the bottom layer on the plate, then finish as icing a cake. This must be refrigerated for 2 days (48 hours) before serving.
