Ingredients/Components
- milk - 1 c
- baking powder - 2 tsp
- large eggs - 2 item
- cornmeal - 1 c
- salt optional - 1/2 tsp
- all-purpose unbleached flour - 1 c
- vegetable oil or melted margarine or butter - 1/4 c
How to make corn bread:
Heat oven to 425°. Into large bowl, sift flour, baking powder and salt (if desired). Stir in cornmeal and mix well. In medium size bowl, beat eggs lightly. Stir in milk and oil until blended. Pour this over cornmeal mixture; stir only until moistened (do not overmix).Into a greased 9 x 9-inch baking pan, pour batter. Bake until wooden pick inserted in center comes out clean, 20 to 25 minutes. Makes 9 servings of corn bread or 6 cups crumbled corn bread for dressing.
