Corn bread



  • milk - 1 c
  • brown sugar - 2 Tbsp
  • oil - 1/2 c
  • baking powder - 2 tsp
  • cornmeal - 1 c
  • beaten eggs - 2 item
  • salt optional - 1/2 tsp
  • whole wheat pastry flour - 1 c
  • dry milk optional - 1/2 c

How to make corn bread:

Note: Substitute 1 cup blue corn meal for 1 cup corn meal for something different!

Preheat oven to 375°. Mix dry ingredients in a bowl. Make a well. In a separate bowl, mix well ingredients. Pour wet ingredients into well of dry ingredients. Stir until just smooth (less stirring is better). Pour into greased glass pie pan. Bake 25 minutes or until toothpick is clean.
