Coconut chews
Ingredients/Components
- salt
- vanilla flavoring - 1 Tbsp
- flaked coconut
- baking powder
- shortening
- powdered sugar
- walnut pieces
- butter room temperature
- + 1 Tbsp - 1/2 c
- fresh eggs - 9 item
- + 1/2 c - 1 qt
- + 2 3/4 c - 1 qt
How to make coconut chews:
Mix powdered sugar, shortening and softened butter together. Stir in flour. Press in ungreased 18 x 26-inch bun pan. Bake in 350° conventional oven and 325° in convection oven, until just golden brown, about 12 minutes. Oven temperatures vary and you may need to adjust cooking time to your oven.Mix remaining ingredients; spread over baked layer. Return to oven and bake 20 minutes. Cool. Cut into squares or bars, 2 x 12=96 servings. Any leftover cookie bars should be stored in airtight containers.
Note: Do not overbake. This is a chewy bar and if overbaked will be hard.
