Ingredients/Components
- sugar
- vanilla - 1 tsp
- salt - 1/4 tsp
- water - 3/4 c
- baking powder - 3 tsp
- sifted cake flour
- white Karo - 1 Tbsp
- melted oleo - 1/2 c
- egg whites, beaten - 5 item
- beaten egg white - 1 item
- large marshmallows, cut in pieces - 6 item
- Mix dry ingredients and add alternately with water
How to make coconut cake:
Cream butter and sugar. Mix dry ingredients and add alternately with water. Add vanilla and egg whites and blend in well. Bake in 3 round greased and floured cake pans at 350° until golden brown. Cool and frost with coconut cake frosting.Frosting:1 1/3 c. sugar1/2 c. water1 Tbsp. white Karo1 beaten egg white6 large marshmallows, cut in pieces1 tsp. vanilla Cook sugar, water and Karo to soft ball stage. Add marshmallows. Beat egg white until stiff and add hot syrup and vanilla. Beat until it holds its shape.
