Ingredients/Components

  • cinnamon - 1 tsp
  • salt
  • water - 1 qt
  • vinegar - 2 Tbsp
  • unsweetened chocolate - 1/2 oz
  • allspice - 1 tsp
  • Worcestershire sauce - 2 tsp
  • cloves garlic, minced - 2 item
  • ground beef - 2 lb
  • cans tomato sauce - 2 oz
  • medium onions, grated - 2 item
  • red pepper - 1/2 tsp
  • whole cloves - 5 item
  • ground cumin seed - 1 tsp
  • large bay leaf - 1 item
  • chili powder you may use more if you like

How to make cincinnati chili:

Add ground beef to water in a 4-quart pot. Stir until beef separates to a fine texture. Boil slowly for 1/2 hour. Add all other ingredients. Stir to blend, bringing to a boil. Reduce heat; simmer, uncovered, for about 3 hours.

Last hour, pot may be covered after desired consistency is reached. Remove bay leaf. Chili should be refrigerated overnight so that fat can be lifted from top before reheating. May add beans last 15 minutes or serve separately. If adding beans, you may add 1 to 2 (15-ounce) cans dark or light red kidney beans or red beans (drained). Serve chili over cooked thick spaghetti. Top with Cheddar cheese and chopped onions.
