Christmas cookies
Ingredients/Components
- sugar - 1 c
- vanilla - 1 tsp
- pkg - 1/2 oz
- salt - 1/2 tsp
- chopped nuts - 1 c
- soda - 1 tsp
- shortening - 3/4 c
- eggs, well beaten - 2 item
- white raisins - 1 c
- candied cherries - 1/2 c
- slices candied pineapple - 2 item
- plain flour, divided
How to make christmas cookies:
Reserve 1 cup flour to roll fruit in. Cream sugar and shortening. Add eggs and 1 1/2 cups flour to mixture, then add vanilla. Put remaining cup of flour on chopped fruit and nuts, stirring gently. Add to rest of mixture. Make into 4 or more rolls. Chill. Slice and bake at 350° for about 15 minutes.Note: I always try to use green pineapple and red cherries. They are pretty that way. I also make ahead and freeze the rolls and bake them as I need to for a party or company. It is easy to double the recipe.
