Chocolate macadamia nut pie
Ingredients/Components
- sugar - 3/4 c
- semi-sweet chocolate - 6 oz
- vanilla
- butter, melted - 4 Tbsp
- cream cheese, softened - 4 oz
- well chilled whipping cream - 2 c
- jar Macadamia nuts, coarsely chopped - 1 1/2
- chocolate wafers, crushed about 1 2/3 c - 6 oz
How to make chocolate macadamia nut pie:
Crush wafers in food processor. Combine crumbs with melted butter and press into bottom of a 9-inch spring-form pan. Melt chocolate in a double boiler over hot, not boiling water, or in the microwave. Allow to cool slightly.Beat together the melted chocolate, cream cheese, sugar and vanilla in a large bowl. Fold nuts into creamed mixture. Whip the cream until peaks form. Beat about 1/4 of the whipped cream into the cheese mixture, then gently fold in remaining cream. Pour into chocolate crumb crust. Freeze at least 4 hours or overnight. Remove 10 minutes before serving.
