Ingredients/Components

  • vanilla - 2 Tbsp
  • pkg - 2 oz
  • milk - 3 Tbsp
  • powdered sugar
  • soft butter - 3 Tbsp
  • Cool Whip - 8 oz
  • light Karo syrup - 2 Tbsp
  • graham crackers - 1 item
  • fresh milk
  • Place layer of whole graham crackers in bottom of pan

How to make chocolate eclair cake:

Butter bottom and sides of 9 x 13-inch pan. Place layer of whole graham crackers in bottom of pan. Beat pudding and milk. Add the container of Cool Whip and mix well. Pour half the pudding mixture over the layer of crackers. Top with another layer of crackers. Pour remaining half of pudding over the crackers and top with another layer of crackers.Topping:2 oz. liquid chocolate3 Tbsp. soft butter2 Tbsp. light Karo syrup3 Tbsp. milk2 Tbsp. vanilla1 1/2 c. powdered sugar Mix all ingredients together and cream well. Pour on icing over the top layer of crackers. Refrigerate for 24 hours before serving.
