Ingredients/Components

  • sugar - 1 c
  • vanilla
  • pkg - 1 oz
  • salt - 1/4 tsp
  • flour
  • cocoa - 1/2 c
  • baking powder - 1/4 tsp
  • baking soda - 1/4 tsp
  • egg - 1 item
  • margarine - 1/2 c
  • Eagle Brand milk - 1/2 c
  • jar maraschino cherries about 48 - 1 oz

How to make chocolate covered cherry cookies:

In large bowl, stir together flour, cocoa, baking powder, salt and soda; set aside. In mixer bowl, beat together margarine and sugar until fluffy. Add egg and vanilla; beat well. Gradually add dry ingredients to creamed mixture; beat until well blended. Shape dough into 1-inch balls. Place on ungreased cookie sheet. Press down center of dough with thumb. Drain maraschino cherries, reserving juice. Place a cherry in the center of each cookie.

In small saucepan, combine chocolate pieces and Eagle Brand; heat until chocolate is melted. Stir in 4 teaspoons of the reserved cherry juice. Spoon about 1 teaspoon frosting over each cherry, spreading to cover cherry. (Frosting may be thinned with additional cherry juice, if necessary.) Bake at 350° about 10 minutes. Remove to wire rack; cool. Makes about 48 cookies.
