  • sugar - 1 c
  • vanilla extract - 1 tsp
  • baking powder - 3/4 tsp
  • baking soda - 3/4 tsp
  • vegetable oil - 1/4 c
  • boiling water - 1/2 c
  • all-purpose flour - 1 c
  • dash of salt - 1 item
  • skim milk - 1/2 c
  • Whipped Topping - 1 item
  • frozen egg substitute, thawed - 1/4 c
  • can lower calorie cherry pie filling, chilled - 1 oz
  • Line bottom of two 9-inch round pans with waxed paper

How to make chocolate cherry delight cake:

Heat oven to 350°. Line bottom of two 9-inch round pans with waxed paper. In a large mixer bowl, combine sugar, flour, cocoa, baking soda, baking powder and salt. Add milk, egg substitute, oil and vanilla. beat on medium speed 2 minutes. Remove from mixer; stir in boiling water (batter will be thin). Pour into prepared pans. Bake 18 to 22 minutes or until wooden toothpick inserted in center comes out clean. Cool 10 minutes; remove from pans to wire racks. Carefully remove waxed paper. Cool completely.

To assemble dessert, place one cake layer on serving plate. Spread with half of the Whipped Topping. Top with half of the pie filling. Top with second layer. Spread with remaining topping and pie filling. Refrigerate at least 1 hour.Whipped Topping:1/2 c. cold skim milk1/2 tsp. vanilla extract1 envelope whipped topping mix (to yield 2 c.) In a small, deep narrow bottom bowl, blend the milk, vanilla and whipped topping mix. Whip at high speed with electric mixer until topping peaks, about 2 minutes. Continue beating 2 minutes longer until topping is light and fluffy. Makes 12 servings. Contains 180 calories and 5 g fat per serving.
