Ingredients/Components

  • salt - 1/2 tsp
  • flour - 2 tsp
  • water - 1 c
  • chili powder - 1/2 tsp
  • chicken broth - 6 Tbsp
  • shredded lettuce - 1 item
  • oregano - 1/2 tsp
  • minced garlic - 1 tsp
  • cumin - 1/2 tsp
  • oil or shortening - 1 item
  • guacamole - 1 item
  • boneless, skinless chicken breasts - 1 lb
  • minced green onions - 1/2 c
  • finely chopped tomatoes - 1 c
  • dozen 6-inch corn tortillas - 1 item

How to make chicken taquitos:

Simmer chicken in water for 20 minutes. Remove and cool. Shred. Saute green onions and garlic in oil slightly. Stir in chicken, tomatoes, broth, flour, cumin, oregano, chili powder and salt. Simmer 3 to 5 minutes.

In heavy skillet, heat 1-inch oil or shortening. Dip tortillas in oil quickly to soften. Drain on paper towels (reserve oil). Spoon about 2 tablespoons chicken mixture down the center of each tortilla. Roll tortillas tightly. Secure with toothpicks. Fry rolled up tortillas until golden brown. Drain on paper towels. Keep Taquitos warm in oven. Be sure to remove toothpicks. Serve on shredded lettuce with guacamole. Serves 6.
