Chicken taco rice
Ingredients/Components
- boned chicken breasts, cut into strips - 1 lb
- oil - 2 Tbsp
- chicken broth - 1 can
- tomato sauce - 1 can
- taco seasoning mix - 1 pkg
- corn, drained - 1 can
- medium red or green pepper or a combination, cut into strips - 1 item
- Minute rice regular or long grain
- 2 oz - 1/2 c
- tortilla chips optional - 1 item
- sour cream optional - 1 item
How to make chicken taco rice:
Cook and stir chicken in hot oil until lightly browned. Add broth, tomato sauce and seasoning mix. Bring to a boil. Reduce heat, cover and simmer 5 minutes. Add corn and red pepper. Bring to a full boil. Stir in rice. Cover; remove from heat. Let stand 5 minutes. Fluff with fork. Serve with cheese, tortilla chips and sour cream, if desired.
