Chicken gumbo
Ingredients/Components
- salt - 1 tsp
- butter - 3 Tbsp
- cooked chicken - 2 c
- chicken broth - 4 c
- bay leaf - 1 item
- dash of pepper - 1 item
- small onion, chopped - 1 item
- chopped parsley - 1 Tbsp
- can whole tomatoes - 1 oz
- small green pepper, chopped - 1/2 item
- okra, sliced - 1 lb
- hot, cooked rice - 1 item
How to make chicken gumbo:
Heat butter in large 3-quart saucepan. Cook okra, onions and green pepper until soft. Add broth, tomatoes with liquid, bay leaf, salt and pepper. Heat to boiling; reduce heat and simmer, uncovered, 15 minutes. Stir in chicken and heat through. Stir in parsley. Serve over rice.Recipe categories: Main dish, Gumbo, Stew.
