- milk - 1 c
- sour cream - 1 c
- can cream of chicken soup - 1 item
- can cream of mushroom soup - 1 item
- medium onion, chopped - 1 item
- chicken breasts - 1 pkg
- corn tortillas - 1 pkg
- medium size can green chili salsa - 1 item
How to make chicken enchilada casserole:
Bake the chicken ahead of time so skin and bones can be removed. Cut chicken into cubes. Cut about 7 tortillas into strips. Make gravy of the first 6 ingredients.In a casserole dish (3-quart size), make layers, alternating chicken, tortilla strips, cheese and gravy mixture. Top with cheese. Bake until heated through at 350° for 45 minutes to 1 hour.
