  • sour cream - 1 c
  • can cream of chicken soup - 1 item
  • can cream of mushroom soup - 1 item
  • medium onion, chopped - 1 item
  • chicken breasts - 1 pkg
  • corn tortillas - 1 pkg
  • medium size can green chili salsa - 1 item

How to make chicken enchilada casserole:

Bake the chicken ahead of time so skin and bones can be removed. Cut chicken into cubes. Cut about 7 tortillas into strips. Make gravy of the first 6 ingredients.

In a casserole dish (3-quart size), make layers, alternating chicken, tortilla strips, cheese and gravy mixture. Top with cheese. Bake until heated through at 350° for 45 minutes to 1 hour.
