Chicken croquettes
Ingredients/Components
- milk - 1 c
- salt
- flour - 2 Tbsp
- butter
- water
- egg - 1 item
- pepper
- salt and pepper - 1/2 tsp
- White Sauce - 1 c
- chicken, finely chopped - 1 lb
- mashed potatoes or bread crumbs - 1 c
- lemon or onion juice - 2 Tbsp
- butter or no cholesterol margarine - 3 Tbsp
How to make chicken croquettes:
White Sauce:2 Tbsp. butter2 Tbsp. flour1/2 tsp. salt and pepper1 c. milk Combine all the ingredients, except for the egg and water, using the White Sauce to bind them together. Beat the egg well and add the water to it. Roll the croquettes in bread crumbs, then in the egg mixture, then in the bread crumbs again. The croquettes can either be deep fried or baked. If deep fried, use 3 cups canola oil in a narrow, deep stainless steel pan. Drop by molded rounds into the hot oil and cook until they rise to the top and are golden brown. If fried, grease well a well cured frying pan, place molded croquettes in the pan and cook until well browned on all sides.White Sauce: Melt butter in a saucepan, then add flour, salt and pepper and stir until mixed well. Gradually pour in milk, stirring until well mixed and smooth.
