Ingredients/Components

  • sugar
  • cream cheese - 1 (8
  • vanilla - 1 tsp
  • cream of tartar - 1/2 tsp
  • miniature marshmallows - 2 c
  • egg whites room temperature - 6 item
  • whipping cream * - 1 pt
  • cherry pie filling or other pie fillings I have used fresh strawberries - 1 item

How to make cherries in the snow:

*I use Cool Whip (about 2 1/2 cups).

Beat egg whites and cream of tartar together. Beat 1 1/2 cups sugar (add slowly) into mixture. Beat for 20 to 30 minutes (I never seem to beat it this long). Put in a 9 x 13-inch metal pan (ungreased) and bake 1 hour at 325°. Leave in oven to another hour to dry.

When meringue is cool, mix the cream cheese, 1 cup sugar and vanilla. Beat until fluffy. Beat the whipping cream (I use Cool Whip); fold into cream cheese mixture. Add miniature marshmallows. Spread on cooled meringue. Serve topped with cherry pie filling or other pie filling (I have used fresh strawberries).
