  • sugar - 1 c
  • eggs - 4 item
  • vanilla - 1 tsp
  • pkg - 3 oz
  • butter, melted - 1/4 c
  • 1 pt - 2 c
  • sugar and cinnamon to taste - 1 tsp
  • 16 graham crackers

How to make cheesecake:

Crust:1 pkg. (16) graham crackers1/4 c. butter, melted1 tsp. sugar and cinnamon to taste Make crust by crushing graham crackers in a plastic bag with a rolling pin. Pour into bowl; add melted butter, sugar and cinnamon. Mix well; press into bottom and up sides of cheesecake pan with removable bottom. Chill.

Separate egg whites into mixing bowl, saving yolks. Beat whites until stiff peaks form. In bigger bowl, mix cream cheese with sugar, then add egg yolks and vanilla. Beat until fluffy. Gently fold in egg whites, mixing lightly. Bake at 350° until top lightly browned, 45 to 60 minutes. Mix sour cream with remaining sugar; pour over top and bake another 5 minutes or so at 450°. Chill overnight.
