Ingredients/Components

• Philadelphia cream cheese - 2 lb
• sour cream - 1/2 pt
• heavy cream - 1/2 pt
• vanilla extract
• sugar - 2 c
• eggs - 4 item
• fresh lemon juice - 1 Tbsp
• cinnamon - 1 tsp
• graham crackers
• melted butter - 1 oz

How to make cheesecake:

Combine cream cheese, eggs and 2 cups sugar; mix. Add vanilla, lemon juice and sour cream; mix well (no lumps). The heavy cream is most important. You must whip heavy cream until fluffy, then fold into cream cheese. Mix slowly until well blended. Set aside.

Crust: Roll crackers fine. Press into spring-form pan. Press firmly to form crust. Add batter. Bake at 350° for 1 hour and 15 minutes. Chill. Serve with berries if wanted.
