  • graham cracker crumbs
  • sugar - 1 c
  • vanilla - 1 tsp
  • pkg - 2 oz
  • egg yolks - 6 item
  • egg whites - 6 item
  • stick butter - 1 item
  • lemon juice - 1 Tbsp
  • sour cream large size container - 1 pt

How to make cheesecake:

First make the graham cracker crust by mixing the crumbs with the melted stick of butter. Press the crumbs into a 10-inch spring-form pan.

Next, in a separate bowl, cream together the cream cheese, egg yolks and sugar. Mix in the sour cream. Now add the vanilla and the lemon juice. In another bowl beat the egg whites until they are stiff and add to the mixture. Pour the contents into the spring-form pan. Bake at 300° for 1 hour. Turn off the oven but leave the cake in the closed oven for another hour. Then open the oven slightly and allow cake to cool in oven for an additional hour. Refrigerate for 4 hours. If you like, add fresh or canned fruit before serving. Yields 8 to 12 servings.
