Ingredients/Components
- sugar
- can pumpkin 2 c - 1 lb
- eggs - 3 item
- salad oil - 1/2 c
- water - 1 c
- all-purpose flour
- whole wheat flour
- baking powder
- baking soda - 1 tsp
- salt - 1 tsp
- cinnamon - 3/4 tsp
- ground cloves - 1/4 tsp
- nutmeg
- raisins
- chopped nuts - 1 c
How to make whole wheat pumpkin muffins:
Preheat oven to 400°. Combine sugar, pumpkin, eggs, oil and water. Beat at low speed for 1 minute. Sift together both flours and next 6 ingredients. Add to pumpkin mixture. Stir just until dry ingredients are moistened. Stir in raisins and nuts. Spoon into lightly greased muffin pans (2 1/2-inch diameter).
