  • sugar - 1 c
  • baking powder - 1 tsp
  • baking soda - 1 tsp
  • cinnamon - 2 tsp
  • salt - 1/2 tsp
  • salad oil - 2/3 c
  • large eggs - 2 item
  • finely shredded carrot - 1 c
  • crushed pineapple with syrup - 1/2 c
  • vanilla - 1 tsp
  • Add the remaining ingredients; mix until moistened
  • butter or margarine - 2 3
  • confectioners sugar
  • milk - 1 2

How to make carrot-pineapple cake:

Sift together flour, sugar, baking powder, baking soda, cinnamon and salt. Add the remaining ingredients; mix until moistened. Beat for 2 minutes at medium speed on electric mixer. Bake in greased and lightly floured 9 x 9 x 2-inch pan in a 350° oven for about 35 minutes, or until done. Cool 10 minutes. Remove from pan, if desired, and cool completely. May be served with or without frosting. If frosting is desired, use Cream Cheese Frosting.Cream Cheese Frosting (Cheesy, Not Too Sweet):8 oz. cream cheese, softened2 to 3 Tbsp. butter or margarine approximately 2 c. confectioners sugar1 tsp. vanilla1 to 2 Tbsp. milk Combine cream cheese and butter; mix until smooth. Add vanilla. Add sifted powdered sugar to taste (usually 1 to 2 cups). Add milk by the teaspoon until mixture reaches a frosting consistency. Too much milk will quickly turn mixture into a glaze.
