  • eggs - 4 item
  • vegetable oil - 1 c
  • honey
  • flour - 3 c
  • baking soda - 2 tsp
  • cinnamon - 2 tsp
  • salt - 1 tsp
  • chopped pecans - 3 c

How to make carrot layer cake:

Beat eggs and oil together until well blended. Add honey in a fine stream, beating constantly. Sift dry ingredients together. Add to batter in 2 additions, beating well after each addition. Fold in carrots and add pecans. Pour into 2 greased and floured layer pans. Bake at 325° for 45 to 50 minutes, until cake tests done with toothpick. Cool on wire racks, then frost.
