Carrot cookies
Ingredients/Components
- sugar - 3/4 c
- eggs - 2 item
- salt - 1/2 tsp
- flour - 2 c
- confectioners sugar
- baking powder - 2 tsp
- shredded coconut - 3/4 c
- grated orange peel - 2 tsp
- orange juice
- mashed cooked carrots - 1 c
- shortening part soft butter - 1 c
- Mix shortening, sugar, eggs and carrots
How to make carrot cookies:
Heat oven to 400°. Mix shortening, sugar, eggs and carrots. Blend in flour, baking powder and salt. Stir in coconut. Drop dough by teaspoon, about 2 inches apart, onto lightly greased baking sheet. Bake for 8 to 10 minutes, or until no imprint remains when touched lightly. Immediately remove from baking sheet. Cool. Frost with Orange Butter Icing.Orange Butter Icing:3 Tbsp. soft butter or margarine2 tsp. grated orange peel1 1/2 c. confectioners sugar about 1 Tbsp. orange juice Blend butter and sugar.
