Ingredients/Components
- melted shortening - 3/4 c
- brown sugar
- eggs - 2 item
- vanilla - 1 tsp
- grated lemon rind - 1 Tbsp
- buttermilk - 1/2 c
- baking powder - 1 tsp
- sifted flour - 2 c
- baking soda - 1/2 tsp
- salt - 1 tsp
- cinnamon - 1/2 tsp
- nutmeg - 1/4 tsp
- rolled oats - 2 c
- chocolate chips - 3/4 c
- walnuts - 1/2 c
- grated carrots - 2 c
How to make carrot cookies:
In mixer bowl, combine shortening, sugar, eggs, vanilla, lemon rind and buttermilk. Sift flour, baking soda, baking powder, salt and spices. Add to liquid ingredients, along with rolled oats, nuts and chocolate chips. Stir just until moistened. Drop by tablespoons onto greased cookie sheet. Flatten.
