Ingredients/Components

  • brown sugar - 1/3 c
  • stick oleo, melted - 1 item
  • Ritz crackers, crushed fine - 12 item
  • Velveeta cheese, melted - 1/4 lb
  • carrots, pared and sliced - 2 lb

How to make carrot casserole:

Boil carrots for 10 minutes. Drain. Arrange in greased 8 x 8-inch baking dish. Sprinkle with brown sugar. Combine oleo and cheese. (I put oleo and Velveeta in measuring cup and melt on Medium in microwave.) Pour over carrots. Sprinkle cracker crumbs on top. Bake 30 minutes at 350°.
