  • eggs - 4 item
  • vanilla - 1 tsp

  • chopped nuts - 1 c
  • flour - 2 c
  • baking powder - 1 tsp
  • baking soda - 1 tsp
  • box confectioners sugar - 1 lb
  • salad oil
  • stick butter or margarine - 1 item
  • finely grated carrots - 2 c

How to make carrot cake:

Nut Icing:1 (8 oz.) pkg. cream cheese1 stick butter or margarine1 lb. box confectioners sugar1 tsp. vanilla1 c. chopped nuts Sift together the flour, baking soda, salt, baking powder and cinnamon. In another bowl, combine the oil and sugar. Mix well and add eggs, one at a time, and beat well. Gradually add sifted dry ingredients. Add finely grated carrots and beat well. Makes 3 layers or 1 (9 x 12-inch) cake. Grease and flour pans or use Pam spray. Bake at 350° for 50 minutes. Cool and ice with nut icing. This make a beautiful 3-layer cake.

Nut Icing: Combine cream cheese and butter or margarine; beat well until light. Gradually add confectioners sugar, vanilla extract and chopped nuts. This makes a lot of icing and can be cut in half if you use the 9 x 12-inch pan. If making a 3-layer cake, you need all of the icing. Do not cut the recipe in half for a 3-layer cake.
