- nutmeg - 1/2 tsp
- coconut - 1 c
- grated carrots - 1 lb
- buttermilk - 1 c
- baking soda - 2 tsp
- vegetable oil - 3/4 c
- ginger - 1/4 tsp
- raisins - 1/2 c
- honey - 1 c
- whole wheat flour
- grated orange rind - 2 tsp
- cream cheese, softened - 8 oz
- white flour - 2/3 c
- walnuts - 1 c
- crushed pineapple, drained - 1 c
- 3 1/2 c - 1 lb
- Combine next 5 ingredients in large bowl; stir well
How to make carrot cake:
Combine first 7 ingredients in large bowl. Combine next 5 ingredients in large bowl; stir well. Add flour mixture and all other ingredients to egg/oil mixture and stir well. Prepare 3 (8-inch) cake pans by greasing pans. Bake at 350° for 30 minutes. Cool in pans 10 minutes before removing. Peel wax paper and cool. Frost, cover and refrigerate.Frosting:1/2 c. butter, softened8 oz. cream cheese, softened1 lb. (3 1/2 c.) confectioners sugar (powdered)2 tsp. grated orange rind1 tsp. vanilla Beat butter and sugar with beater until fluffy. Add remaining ingredients.
