Ingredients/Components
- sugar - 2 c
- cooking oil
- eggs - 4 item
- flour - 2 c
- baking soda - 2 tsp
- salt - 1 tsp
- cinnamon - 2 tsp
- shredded carrots
- chopped walnuts
- Beat in eggs until fully incorporated
- butter or oleo - 1/4 c
- powdered sugar or more - 2 c
- vanilla to taste - 1 item
How to make carrot cake:
Cream together sugar and oil. Beat in eggs until fully incorporated. In another bowl, whisk together flour, baking soda, salt and cinnamon. Add dry ingredients to creamed mixture, blending well. Stir in carrots and walnuts. Bake in 15 x 10 x 2-inch greased pan at 300° for 1 hour. Ice when cool.Icing:1 oz. pkg. cream cheese1/4 c. butter or oleo2 c. powdered sugar or more vanilla to taste Combine cream cheese and butter; add vanilla and enough powdered sugar to spreadable consistency.Recipe categories: Desserts, Cakes, Carrots.
