Ingredients/Components

  • sugar - 2 c
  • cinnamon - 2 tsp
  • eggs - 4 item
  • vanilla - 1 tsp
  • salt - 1 tsp
  • chopped nuts - 1 c
  • flour - 2 c
  • oil - 1/2 c
  • soda - 2 tsp
  • grated carrots - 3 c
  • powdered sugar - 2 c
  • cream cheese, softened - 1 (8
  • Beat in eggs

How to make carrot cake:

Mix oil and sugar. Beat in eggs. Sift dry ingredients and add along with carrots. Stir well. Bake in greased 9 x 13-inch pan at 350° for 50 minutes until toothpick comes out clean.

When cool, frost with cream cheese frosting.Cream Cheese Frosting:1 stick softened margarine1 (8 oz.) cream cheese, softened1 tsp. vanilla2 c. powdered sugar Mix well.
