Brunch puffs
Ingredients/Components
- eggs - 4 item
- butter or margarine - 1 tsp
- salt - 1/2 tsp
- water - 1 c
- pepper - 1/4 tsp
- cup chopped onion - 1/2 item
- shredded cheddar cheese - 1 c
- cup butter or margarine - 1/2 item
- cup all - purpose flour - 1 item
- Add flour all at once and stir until a smooth ball forms
- chopped fully cooked ham - 1 c
How to make brunch puffs:
In a large saucepan, bring water, butter and salt to a boil. Add flour all at once and stir until a smooth ball forms. Remove from the heat; let stand 5 minutes. Add eggs, one at a time, beating well after each addition. Beat until mixture is smooth and shiny. Drop by 1/4 cupfuls 2 in. apart onto a greased baking sheet. Bake at 400 degrees for 35 minutes or until golden brown. Transfer to a wire rack. Immediately split puffs open; remove and discard tops and soft dough from inside. Set aside. Prepare filling.Filling:1/2 cup chopped green pepper1/2 cup chopped onion1 tsp. butter or margarine8 eggs1/2 tsp. salt1/4 tsp. pepper1 c. chopped fully cooked ham1 c. shredded cheddar cheese In a large skillet, saut?© green pepper and onion in butter until tender. In a medium bowl, beat eggs, salt and pepper. Add to skillet, stirring over medium heat until almost done. Add ham and cheese; stir until eggs are set. Spoon into puffs.
