Ingredients/Components

  • salt - 1/2 tsp
  • flour - 1 Tbsp
  • cream - 2 c
  • beaten eggs - 4 item
  • garlic powder - 1/2 tsp
  • sliced green onions - 1/2 c
  • shredded Cheddar cheese
  • 7-inch flour tortillas - 8 item
  • chopped green peppers - 1/2 c
  • few drops hot pepper sauce - 1 item
  • chopped ham 2 c - 12 oz

How to make brunch enchiladas:

Combine ham, onions and peppers, plus half of the cheese. Mix and place 1/8 of mixture at end of each tortilla and roll up. Place seam side down in a greased 12 x 7 x 2-inch baking dish.

Combine eggs, cream, flour, salt, garlic powder and hot pepper sauce. Pour over tortillas; cover and refrigerate several hours or overnight. Bake, uncovered, in a 350° oven for 45 to 50 minutes. Sprinkle with remaining cheese. Bake until cheese melts. Let stand 10 minutes before serving. Serve with mild salsa sauce.

Can be made ahead and frozen.
