Bread and butter pickles
Ingredients/Components
- sugar
- salt - 1/3 c
- celery seed
- sliced onion
- medium cucumbers - 6 lb
- white vinegar - 3 c
- mustard seed - 2 Tbsp
- turmeric
- trays ice cubes - 2 item
- large garlic cloves whole - 2 item
How to make bread and butter pickles:
Wash cucumbers, drain and cut unpeeled cucumbers into 1/4-inch slices. Put in a large bowl. Combine the cucumber slices, onion, garlic and salt; cover with ice cubes or crushed ice. Mix thoroughly and let stand for 3 hours.Drain off liquid and remove garlic. Combine sugar, spices and vinegar and heat just to a boil. Add cucumber and onion slices. Simmer together for 10 minutes. Pack loosely in clean hot pint jars, leaving 1/2 inch of headroom; remove air bubbles. Adjust lids; process in boiling water bath (212°) for 10 minutes. Makes 7 pints.
