Blueberry french toast
Ingredients/Components
- sugar
- eggs - 1 doz
- butter - 1 Tbsp
- cornstarch - 2 Tbsp
- water - 1 c
- 8 oz - 2 pkg
- blueberries - 1 c
- fresh or frozen blueberries - 1 c
- slices day old white bread - 12 item
- honey or maple syrup - 1/3 c
How to make blueberry french toast:
Topping:1 c. sugar2 Tbsp. cornstarch1 c. water1 c. blueberries1 Tbsp. butter Cut bread into 1-inch cubes; put 1/2 of bread cubes into a greased 9 x 13 baking pan. Cut cream cheese into small cubes; put on top of bread. Sprinkle blueberries over bread and cream cheese. Add remaining bread. In large bowl, beat eggs; add milk and honey. Pour over bread. Cover. Chill overnight. Remove from refrigerator; let set out for 30 minutes prior to cooking. Cover with foil and bake at 350° for 30 minutes. Uncover and bake another 30 minutes (needs to be golden brown and "set" in the center).TOPPING: Mix sugar and cornstarch; add water and bring to boil. Stir in blueberries; reduce heat. Add butter and serve.
