Ingredients/Components

  • sugar - 1 c
  • milk - 3/4 c
  • salt - 1/2 tsp
  • flour - 2 c
  • water - 3 Tbsp
  • baking powder - 2 tsp
  • shredded coconut - 1 c
  • Crisco - 1/2 c
  • lemon juice - 2 Tbsp
  • grated lemon rind - 1 tsp
  • whole egg and 2 egg yolks, well beaten - 1 item
  • Add sugar and cream until light

How to make coconut cake:

Combine Crisco, salt and lemon rind. Add sugar and cream until light. Add beaten eggs; mix well. Add flour and baking powder alternately with milk. Bake at 375° for 25 to 30 minutes.Coconut Icing:3 egg whites, unbeaten1 1/2 c. sugar2 Tbsp. lemon juice3 Tbsp. water1/4 tsp. grated lemon rind1 c. shredded coconut Put egg whites, sugar, lemon juice and water in double boiler. Mix thoroughly. Place over rapidly boiling water. Beat constantly with rotary beater until it stands in peaks, about 7 minutes. Remove from heat; add lemon rind and beat until cool. Sprinkle with coconut.
