Ingredients/Components

  • butter, softened - 3/4 c
  • sugar - 3/4 c
  • cinnamon - 1/2 tsp
  • eggs - 2 item
  • milk - 2/3 c
  • vanilla extract - 1/2 tsp
  • salt - 1/4 tsp
  • baking powder - 2 tsp
  • all-purpose flour - 2 Tbsp
  • unsifted all-purpose flour
  • fresh lemon juice - 1 Tbsp
  • blackberries, rinsed and drained - 4 c

How to make blackberry cobbler:

Topping:1 3/4 c. unsifted all-purpose flour2 tsp. baking powder1/4 tsp. salt3/4 c. butter, softened3/4 c. sugar2 eggs1/2 tsp. vanilla extract2/3 c. milk Preheat oven to 350°. In large bowl, toss fruit and lemon juice. In small bowl, mix sugar, flour and cinnamon; add to fruit. Toss. Pour into 13 x 9-inch baking dish.

Make topping. On waxed paper, mix dry ingredients. In large bowl, with mixer at high speed, beat butter until fluffy. Add sugar. Beat 2 minutes or until fluffy. Beat in eggs and vanilla. Beat in flour mixture (in thirds) alternately with milk. With spoon, drop batter over fruit mixture.

Place foil on oven rack below dish to catch drips. Bake 60 minutes or until bubbly and pick inserted in cake comes out clean.
