  • cooking oil - 1 Tbsp
  • lemon - 1 item
  • diced bell pepper - 1 item
  • diced cucumber - 1 item
  • diced red onion - 3/4 item
  • diced jalapeno - 1 item
  • diced fresh parsley - 1 1
  • cans purple hull peas - 2 item
  • diced tomatoes, seeded - 2 item
  • diced fresh mushrooms 1 small carton

How to make black-eyed pea salad:

Rinse and drain the purple hull peas. Clean seeds from jalapeno and dice. Seed and dice all other ingredients and mix in bowl. Salt and pepper. Squeeze the juice of 1 lemon over it; mix. Add cooking oil.

May mix one day before using. Toss before serving.
