Ingredients/Components
- cooking oil - 1 Tbsp
- lemon - 1 item
- diced bell pepper - 1 item
- diced cucumber - 1 item
- diced red onion - 3/4 item
- diced jalapeno - 1 item
- diced fresh parsley - 1 1
- cans purple hull peas - 2 item
- diced tomatoes, seeded - 2 item
- diced fresh mushrooms 1 small carton
How to make black-eyed pea salad:
Rinse and drain the purple hull peas. Clean seeds from jalapeno and dice. Seed and dice all other ingredients and mix in bowl. Salt and pepper. Squeeze the juice of 1 lemon over it; mix. Add cooking oil.May mix one day before using. Toss before serving.
