Black-eyed pea salad
Ingredients/Components
- dry peas, cooked - 3 cans
- cider vinegar - 1/2 c
- olive oil - 1/3 c
- sugar - 2 tsp
- ground red pepper - 1/4 tsp
- salt - 1 Tbsp
- chopped parsley - 1/2 c
- clove garlic, minced - 1 item
- celery stalks, thinly chopped - 2 item
- green onions, minced use blades too - 3 item
How to make black-eyed pea salad:
Mix oil, vinegar and seasonings well. Mix all other ingredients and pour seasonings over. Mix well. Refrigerate 2 hours.Optional: A little chopped cilantro.
