Black beans and rice
Ingredients/Components
- oil - 1 Tbsp
- cloves garlic, minced - 2 item
- long grain rice - 1/2 c
- bay leaf - 1 item
- red pepper flakes - 1/4 tsp
- thyme - 1/4 tsp
- Monterey Jack cheese - 1 item
- low-sodium chicken broth
- medium yellow onion - 1 item
- pumpernickel bread - 1 item
- small red sweet pepper - 1 item
- cooked black beans, drained
How to make black beans and rice:
Heat oil in a large pan for 1 minute. Add finely chopped onion and red pepper. Cook over medium heat for 5 minutes. Add garlic, beans, rice, broth, pepper flakes, crumbled thyme and bay leaf. Bring to a boil. Reduce heat and simmer until rice is tender and liquid is gone, about 20 to 25 minutes. Remove bay leaf. Sprinkle 1/2 cup of cheese over each serving.
