Ingredients/Components
- oil - 2 Tbsp
- vinegar - 1 tsp
- cloves garlic, minced - 2 item
- bay leaf - 1 item
- can tomato sauce - 1 oz
- oregano - 1 tsp
- onion, chopped - 1 item
- dry sherry - 1/4 c
- green pepper, chopped - 1 item
- thyme - 1 tsp
- black beans - 1 lb
- sprig of parsley - 1 item
- chopped onion, parsley, chives or cucumber for garnish - 1 item
How to make black bean soup:
Soak beans overnight; to same water add onion, bayleaf and parsley. Bring to boil and cook until tender. Cook green pepper and garlic until soft. Add to beans with other ingredients and cook until thickened. Pour in dry sherry and serve with garnish sprinkled on top.
