Big soft ginger cookies
Ingredients/Components
- sugar - 1 c
- salt - 1/4 tsp
- flour
- baking soda - 1 tsp
- egg - 1 item
- ground cloves - 1/2 tsp
- ground cinnamon - 3/4 tsp
- ground ginger - 2 tsp
- baking molasses - 1/4 c
- oleo, butter or shortening - 3/4 c
How to make big soft ginger cookies:
Combine flour, ginger, soda, cinnamon, cloves and salt. Set aside. In large mixing bowl beat oleo or other shortening with electric mixer on low speed for 30 seconds to soften. Gradually add the 1 cup of sugar and beat until fluffy. Add eggs and molasses and beat well. Stir dry ingredients into beaten mixture. Shape into 1 1/2-inch balls (1 heaping tablespoonful dough each). Roll in 2 tablespoons sugar and place on ungreased cookie sheet 2 1/2 inches apart. Bake at 350° about 11 minutes or until light brown and still puffed. (Do not overbake.) Let stand for 2 minutes to cool.
