Ingredients/Components
- beef stew meat, cut in 1 1/2-inch cubes - 2 lb
- medium onions, cut in eighths - 2 item
- celery stalks, cut in 1-inch diagonals - 3 item
- medium carrots, cut in half, crosswise and lengthwise - 4 item
- tomato juice - 3 c
- quick tapioca - 1/3 c
- sugar - 1 Tbsp
- salt - 2 tsp
- pepper - 1/4 tsp
- bay leaf - 1 item
- medium potatoes, cut 1/4-inch thick slices - 2 item
How to make beef stew:
Put all ingredients, except potatoes, into a 3-quart casserole. Bake, covered, at 300° for 2 1/2 hours. Remove bay leaf and stir in potatoes. Bake, covered, for additional 1 hour or until meat and vegetables are tender. Yields 8 servings.Recipe categories: Main dish, Beef, Stew.
