Ingredients/Components

  • beef stew meat, cut in 1 1/2-inch cubes - 2 lb
  • medium onions, cut in eighths - 2 item
  • celery stalks, cut in 1-inch diagonals - 3 item
  • medium carrots, cut in half, crosswise and lengthwise - 4 item
  • tomato juice - 3 c
  • quick tapioca - 1/3 c
  • sugar - 1 Tbsp
  • salt - 2 tsp
  • pepper - 1/4 tsp
  • bay leaf - 1 item
  • medium potatoes, cut 1/4-inch thick slices - 2 item

How to make beef stew:

Put all ingredients, except potatoes, into a 3-quart casserole. Bake, covered, at 300° for 2 1/2 hours. Remove bay leaf and stir in potatoes. Bake, covered, for additional 1 hour or until meat and vegetables are tender. Yields 8 servings.
