Ingredients/Components

  • cold water
  • cloves garlic, minced - 2 item
  • ground beef - 1/2 lb
  • salt and pepper to taste - 1 item
  • dried oregano leaves - 1 tsp
  • sliced mushrooms - 3/4 c
  • sliced carrots - 1/4 c
  • can stewed tomatoes, cut up - 1 1/2
  • quick barley uncooked - 1/2 c
  • Velveeta pasteurized process cheese spread, cubed - 1/2 lb

How to make beef barley soup:

Brown meat in large saucepan; drain. Stir in water, tomatoes, carrots, mushrooms, barley, garlic and oregano. Bring to a boil; reduce heat. Cover and simmer 10 minutes or until barley is tender. Season to taste. Stir in cubed cheese spread until melted. Garnish as desired. Serve with sliced Italian or French bread.
